So someone has figured out how to disable my cameras by taking them offline and then they enter my property. Any thoughts on how this can happen?

They could be using a jamming device.

Is there any way to detect that? Once they go offline they stay that way until I reset them.

No way to detect it that I know of, though a jammer would also impair your home wifi.

 

Are you sure that a person is intentionally doing this - and that it isn't just a connection drop (which happens from time to time)? Jammers are illegal, so you could report it to the police.
