I'm in Florida and I want to know if I can record a contractor working inside my home using audio and video if I'm not there? Also, what if the camera are visible for them to see? Like on the kitchen or cabinet??

The best option is to tell the contractor about the camera and get consent. With consent you are on safe ground.
