This is a common problem...
Any schedule that PASSES thru Midnight must be broken into two parts.
( it eliminates the day change )
So, take the first part of the schedule of 7pm - 6 am. and Go from 7 PM to 1159 PM,(on next day ), the second half goess from 12 midnight to 6 AM

That works for the first day, but how to set schedule for the next days? For example,: Monday- 8pm to 11:59pm, then Tuesday- 12:00am to 8am. OK. But then how to begin the cycle again, i.e., set Tuesday at 8pm to 11:59pm if there is already a time set for Tuesday morning?

Just add the same MODE again at 8pm on tuesday...you can have more than one mode in a scheduled day.
Btw, it is easier on a web browser over the apps cause you can drag the time line vertical or expand by dragging
