In a chimeless setup with the arlo video doorbell, is there any difference between using the power kit in bypass mode to connect the two wires together (the wires that would usually be connected to the chime) rather than just connecting/shorting the two wires together (with a wire nut for example) to make the connection?

You can just connect the wires together.
In bypass mode, the power module always prevents current from flowing through the chime. If you have no chime, there is no reason to use it.
