Is there a filename structure to the video files downloaded via the website? Maybe information that might indicate the date/time the video was recorded?

The web downloads are in epoch time - the number of seconds since Jan. 1, 1970 at midnight. You can use various websites to convert that to human-readable date/time such as epochconverter.com.
