Say I have all recorded videos to be 5-min long, which I believe is the length cap of recorded videos. Then how many videos at most can be stored in a 32GB (the capacity cap) SD card, if I use Arlos Go 2 to record?
Or if anyone knows about how big a 1080p video recorded by Arlos Go 2 is?

The 1080p cameras record at 1 mbps (actually a bit less, there is some margin in the bandwidth guidance). So you'd get about 72 hours of recordings on a 32 GB microSD card (32*8*1000/3600 = 71.11 hours).
While the Pro 5s+smarthub recordings can be viewed in the app, that is not the case for the Go 2. You'd need to eject the storage using the app, and then connect it to a PC to review the recordings.
