Can I put 1 camera to sleep and leave the others active?

Yes. Typically that is done via use of different rules in the 3 modes available and then either manually switch to the appropriate mode in the Dashboard or by creating a schedule to automate the switching. This FAQ may be useful to get you started but feel free to ask here, too.

If you just want to do this temporarily, you can also just go into the video settings and turn the camera off.
