I'm trying to make sure my camera captures folks coming up to the front door. RIght now, the camera often activates when a car enters the driveway and then activates again once they're past where the camera can see them at the door. Is the delay between captures linked to the recording time (e.g. longer capture, longer reset time before captures) so that I'm better off setting the camera to capture multiple short videos instead of one long one?

Multiple short videos may be the answer but only testing will tell. Also, perhaps a different position or angle so the motion is across the FOV rather than directly at it would help. There's a lag between motion detection and recording because the camera has to wake up and create a server connection before recording can actually start. Getting best motion detection is key to minimal lag and is trial and error.
