I have several cameras I’ve collected over the years and multiple hubs, but when wanting to set them up in different locations as I get deployed, I don’t know which ones can go with which hub and is there a limit to how many cameras particular hubs can have

Technically there isn't a limit to how many cameras can be synced to a base station or smarthub, but there is a limit to how many cameras that can stream simultaneously. See here for more information: https://kb.arlo.com/1179521/How-many-Arlo-cameras-can-I-view-at-the-same-time

If there a limit to how many cameras can stream, is there a way to hook up multiple hubs? Should you have a large property?

Yes, you can use multiple hubs. They don't form a mesh though, you need to connect each camera to one of the hubs.
