I can't quickly disarm the doorbell camera from recording temporarily or arm it again fast - how can I now do that?
Also it seems to default to Arm Away even though I'm home, surely it should be on Standby unless you select to choose Arm Home for protection when on your own at home or Arm Away for when you eave the house?
I can't find things easily on this upgrade and didn't even know it had been updated.
Anyone found work arounds.

Not sure what you mean by "Default", since by default the modes need to be manually changed from the dashboard screen.  Do you have scheduling or geofencing automations enabled?  If you do, post back with screenshots of the automations, as they are hard to get working correctly.

You have three modes to work with.  All can be modified.  Arm Away normally arms all cameras (including the doorbell), Arm Home arms all the outdoor camera models, but not the indoor camera models.  Standby disarms all the cameras.

If you only have the doorbell, then just manually change the system to "Standby" when you want to disarm it.

If you have other cameras, then you can modify "Arm Home" to disarm the doorbell, but leave your other cameras on.  Then change to "Arm Home" when you want to disarm the doorbell, and "Arm Away" when you want it armed.
