At a renovation, we cut off the chime and put it behind a plaster wall.

Is there a way of installing the doorbell without having to connect the chime to the powerkit? Hence can I bypass this step somehow?

Without the chime being installed, there's no need for the power kit.

The chime still functions? (works when a traditional doorbell is pressed?)

Well, let me rephrase it - we removed the chimebox and hid the wires behind the walls.

So no it doesn't work anymore

That assumes the wire from the doorbell and the wire to the transformer were joined together before @systech "hid the wires".

If the wires were not joined together, then the doorbell needs to returned, and replaced with one of the battery-powered models.
