OMG, I am LITERALLY a rocket scientist, have designed spacecraft that have gone to other planets, and this is the worst, most confusing app I have ever seen.

Can someone tell me how to do this?

 - I have outdoor cameras that I want enabled from 12am-5am when Home, and sunset to sunrise when I'm Away. I have the camera to only alert when detecting people.

 - I have indoor cameras that I want enabled from 12am-5am with alerts when Home, and always with alerts when I'm Away.

 - I have a video doorbell that I want enabled from 12am-5am with alerts when Home, enabled with alerts sunset to sunrise when Away.

I can setup Home/Standby:

Home: Indoor cameras, outdoor cameras, doorbell enabled

  Standby: All disabled

  Home automation schedule:

    - switch to disabled at 12am

Since I'll now be in Standby at 12 do I need to add an automation schedule in Standby to switch to Home at 5am?

I assume when I'm away I manually enter Away mode. I can define Away as everything enabled. I can add a schedule to Away but the only option is to change to another mode Home or Standby or to change a device setting like motion sensitivity. While in Away how do i set up schedules for my devices?

You could create "routines" & "automations" for your cameras to be armed and disarmed during the times you mentioned.

Well, duh. The problem is, with Schedules, you can only switch between Away, Home and Standby, or change a setting on your camera.

I've set up:

Away: Outdoor Disarmed, Indoor Armed, Doorbell armed

Home: Everything armed

Standby: Everything off

Scheduling:

12 am Standby-> Home, (Home and Standby Enabled)

5 am Home-> Standby (Home and Standby Enabled)

Sunset: Away->Home (Home and Away Enabled)

Sunrise: Home-> Away (Home and Away Enabled)

I'm guessing under the "Enabled" setting in the Home<->Standby Schedules if I only "always enable" Home and Standby, the system knows to not do the Standby->Away. Likewise when in Away<-> Home schedules, if I only "always enable" Home and Away, it will know not to do the Home->Standby. We'll see if that's how it works.

If this is how it works, some additional wording under the Enable option such as: "after this Schedule has executed, other Schedules that switch to modes that have not been set to Active here will not be executed." Right now it says: "By default Automations will be Always be enabled when you any Mode. All other automations will be disabled when entering this mode." ??

As others have said, a few examples would be beneficial.
