It seems like if I turn off Notifications for a category, that it does not record for that category. Correct?
I do not want to be notified for Animals or Other Motion, but I still want to record those. Is there a way to do that?

It should still record them.  You can test this by turning off all the notifications, and see if you still get recordings when motion is detected.
