Maybe I'm over thinking this setup,
I want a mode where 1 camera actually still records and notifies me if motion detected and other cameras do nothing.
A second mode where 2 cameras still record/ notify me and the 3rd one doesn't.
Do I simply setup the first mode with the one camera and NOT add the other two cameras
and a second mode with 2 cameras listed? change the mode as needed..
Is it that simple?

Yup, it's that easy. You can also assign those new custom modes to the schedule, if apropriate, so you don't have to manually change them.
