Last night my car was broken into; the floodlight sits where the cars are visible. The floodlight captures birds, cats, people and cars but DIDNT CATCH A SINGLE THING LAST NIGHT!! So I’m confused as to why the floodlight didn’t record anything!

Without knowing how the subjects approached the cars, at what distance from the camera as well as the camera positioning and motion sensitivity settings, it's impossible to say. You should test to verify that they're covering what you need so you can improve the situation. The PIR sensors only detect people out to ~25 feet but that also depends on the sensitivity setting and the direction of motion with best detection being caused by movement ACROSS the FOV, not directly at the camera.
You may want to use a nighttime mode that increases the motion sensitivity in the floodlight's rule.
