I set my cameras to turn on from 7:30pm-7:30am. Every time after 12 midnight it doesn’t record anything. I literally have to back into the setting and the app to input the scheduled times again. That will work for one day then it goes to not recording anything after midnight again.

You have to set two schedules:
7:30pm to 11:59pm then the second schedule from 12:00am to 7:30am.

I seem to recall a problem I had once where I could not use the same mode on the other side of midnight. I created a new identical mode with a different name and used one on one side of midnight and the other on the other side of midnight. Perhaps this would be a workaround for you also.
