Why is it only picking up a certain time length of movement. I have it set till the movement stops but it stops way before

That function has had issues for a while now... I recommend using a FIXED time which works as should.
Seems that if motion isn't detected continuously then the video stops early.

To use the "until motion stops" means the camera has to be able to actually detect it. What's motion in your eyes may not be so to the camera. You can test this bu using the motion detection test and move around to determine where the boubdries of detection exist. Also, a pause of ~5 seconds in motion causes the camera to stop recording.
