I'm considering getting the Arlo Pro 2, but will only be able to plug in two cameras out of the five I want to install.
What I'm wondering is whether there's a difference between the base station you get with the Pro and the one you get with the Pro 2?
If I were to get the Pro base station and three cameras, would I then be able to add on two Pro 2 cameras to plug in and take advantage of the extra capabilities?

The base station is the same for the Pro and the Pro 2. All the Arlo cmeras that use a base station can work on any base station including the original base.
