I've tried resetting the hub, all the cameras and I can only get my Arlo Pro cameras to pair, but my Essential Gen 2 outdoor cameras will not pair

Will they connect to WiFi? That may be needed to get updated firmware that will then allow the cameras to connect to the hub (you'll have to remove them from your account and onboard them again to do that).

It connected and immediately did a firmware update. The camera shows up on my feed, it just won't pair with the hub so I can record locally.

And when the update was complete, did you remove the camera from your account and try to add it to the hub? The setup procedure should show you a choice of hub vs. WiFi although, IIRC, you may have to connect to WiFi and then the procedure allows you to connect to the hub (I may have this mixed up - it's been a while).

I removed it from the hub and my app and it still won't show that it's paired with the hub. My other 2 Ultra cameras showed "paired" when you click on the hub. Soooo frustrating!!

You say you removed it but did you then connect it again?
