I want to schedule my cameras to come on at 10pm and go off at 8am. When i go into schedule settings it tells me i must schedule start time before end time. So i try and adjust end ti.me first and get a similar error message. Why cant i set whatever ti.mes i want to start and stop recordings??

Because you're covering multiple days. Start one at an appropriate time and go to 11:59PM and then again from 12:00AM to whatever stop time you want.
