I've seen postings back to 2017 complaining that turning off mic does not stop wind noise alerts. I literally got 40 wind noise alerts today and sick of it
What gives? Has this been fixed? Does turning off the mic actually do anything at all?

Shouldn't be an issue now, but you do need to disable audio detection in the right place.
Check the rules in the mode(s) you are using, and make sure audio detection is disabled there. Also go into the smart notifications, and make sure CO/Smoke detection is turned off. That feature is listening for chirps from a nearby smoke detector, and in the past it has sometimes resulted in audio triggering. Outdoor cameras are likely too far away from a smoke detector for that feature to be of use.
