Is there a setting that allows you to have an auto-shutoff (after a certain amount of time) in the event that a user forgets to pause a camera after activating the live stream function ?

On the Arlo cameras it is all ready built in.... the time out function runs for 30 mins and auto shuts off ( just for the reason you mentioned and to preserve batteries )
Also if you notice, when you change screens it auto shuts down the cameras if viewing.

Thanks - is there any way to adjust the time-out setting, so it doesn't run for 30 min ?

No, it's hard-coded.
