I’m on the opposite coast from my cameras and all of a sudden, the camera and hub are showing “not connected”, which is ridiculous since everything else in the house (security, thermostats, Tesla solar, etc) is connected and working and there does not seem to a be way of resetting this useless equipment.

Sometimes force closing the app (or rebooting the phone) will fix this. A WiFi switch that the hub is plugged into can be useful, too, allowing you to power cycle the hub. Are you still getting recordings and notifications? Maybe it's just a display issue.
