Anyone else find the new app extremely hard to navigate compared to the old one?
I want 6 cameras to be activated 9:00 PM to 06:00 AM and 3 always active. On the old app, I just chose the day and timeframe and that was it. Easy.
How do I set it up on the new app? I understand where to find the first part, choosing which day and starting hour in scheduling/plan, but where is the stop command at 6:00 AM?

There is no stop. Instead you start a new mode at 6 am.

There are two ways to approach this.
One is to set up Arm Away to arm all cameras, and set up Arm Home to arm only the three you want on 24x7. Then schedule Arm Away to start at 9 pm, and Arm Home to start at 6 am. Enable both automations to be active in Arm Home and Arm Away, but disabled in Standby.
The other way is to set up both Arm Away and Arm Home to arm all cameras, and set up standby to arm the three 24x7 cameras. Then schedule Arm Home to start at 9 pm and Standby to start at 6 am. Enable both automations to be active in Arm Home and Standby, but disabled in Arm Away.
The advantage of the first way is that it is easy to disarm all your cameras. Just change the mode to Standby, and all cameras will be disabled until you manually change the mode.
The corresponding advantage of the second way is that it is easier to arm all cameras 24x7 when you are away from home. You just change the mode to "Arm Away" when you leave, and change it back when you return. If you plan on adding geofencing automations (warning - they don't work perfectly), then the second way is the one you should use.

You will create one schedule for the start time and then you will create another schedule for the end time.
