Having the ability to set up multiple activitie zones is completely useless if I can’t set different settings for each zone (such as notifications, time of day, etc.) I want to record everything as people sometimes leave garbage on my lawn but I don’t want to get a notification of every single thing that happens on the street throughout the day.

While my situation is likely very different from yours, my single zone, set to eliminate the street almost entirely, along with reducing the motion sensitivity in my modes and rules has worked well. I'm only interested in folks walking to and from the door so my sensitivity is set to 45 but you may need a somewhat higher setting. Don't forget that detection for people is only about 25 feet which may affect how you change that setting.
In addition, multiple custom modes that are then set into the schedule at appropriate times should give you the ability to change everything except the zone.
