The instructional video says to adjust the motion sensitivity so it is the minimum that will detect a person walking by. What I'd like to know is, what is the disadvantage to setting the motion sensitivity higher than that?

The only disadvantage is that when the threshold is too high, you might begin getting detections that you don't want. In addition to being annoying, that will drain the battery more quickly.
