As simple as this sounds, this does not appear possible in the app.  Several of my cameras display a better picture at night with the ambient light present and without night vision.  The night vision mode does not look good on these cameras.  One of them has part of the wall in the frame and with night vision enabled the IR lighting bounces off the wall and obscures the picture.  So night vision is not an option for that camera, and I can't move it because of the configuration of my back yard.  It is currently optimally placed to capture movement in a critical area.  

 

Also, if I were to keep night vision setting to on, the ambient lighting at night for my cameras is such where night vision automatically activates, and forces me to manually turn it off.  But when I turn off night vision in the settings for a particular camera, the spotlight feature also turns off.  I can not get the spot light setting to turn on and stay on independently of the night vision setting.  They appear locked together where either both must be on or both must be off.  This is important because I want the spotlight to activate when motion is detected to serve as a deterrent to possible intruders outside my house in my driveway at night.  But this is impossible without night vision being on......which doesn't even look half as good with night vision off. 

 

Extremely frustrating and poorly thought out functionality.  The spotlight setting should be independent of night vision.  Arlo, please consider this in a future update.

If you turn on Nightvision and enable color, then the spotlight will come on at night.  There might be a couple of seconds of IR recording at the beginning, but that should shift to color when the spotlight turns on.

 

Your other option would be to light up the area with an outdoor flood, to give the camera enough light so that it doesn't shift to Nightvision.
