One of my cameras keeps going offline. Charged it, updated it, it worked fine for 2 days then went to offline again. All other cameras working fine.

Remove and refit the battery to reset the camera.
If that does not work then remove it from the system and resync.

Also, try swapping cameras around to see if it's the camera or position.

I'd swap positions of this camera with one of your other cameras while simultaneously moving the base station a bit further away from your wifi router
