I purchased the 6 cameras for arlo pro. I like the arm mode to where it detects motion for all cameras but I only need five camera to record. How do I set five camera for motion and leave one camera to just watch.

Create a custom mode using the default Armed mode as an example.  Just leave out that one camera - any camera without a rule is disarmed as you wish.
