I’m interested in getting a smart outdoor camera that I can use to film practice for a beach volleyball court. I just want to be able to record for 60-90 minutes with no interruptions and save videos on the cloud or local storage. I read that 4k mode isn’t available for that scenario but I would be happy with any HD quality if that’s possible. I’d be happy to hear about other brands or types of cameras that would allow me to get things done from a phone mainly

The only way to do that would be to use an outdoor camera that's connected to AC power and subscribe to CVR (continuous video recording). However, while you can view the action later, you would have to use 3rd party screen capture software to record it locally. Sounds like Arlo isn't your solution.
