I’m trying to add an iPad to view my cameras but it doesn’t see the hub. I’m worried if I unplug and replug the hub I will have to reset the cameras. What can I do to get this new iPad to see the hub?

If you are seeing the cameras from another device, then you are using the wrong process.
What you do is log into the app on your iPad using your Arlo account credentials.
