I cannot find the motion sensitivity settings in the settings anywhere. Did an update change this?

What version of the user interface (UI) are you using? The old one uses Library to view videos while the new one uses Feed.
Motion sensitivity is set in your modes and rules. The exact path to set this depends on the UI in use. In the following FAQ the description is for the old UI but near the top is a link to the new UI's method:

It’s 4.3. I don’t have the geofencing option anymore either. I use scheduling and when I go into that it’s just the calendar. There also used to be a “test” in the settings so you could check the cameras video but I’m guessing that was redundant.

4.3 is the app version, not the UI. However, your screenshot clearly shows you're using the old UI since the new one doesn't have the Arm/Disarm All Devices buttons.
Based on your descriptions, I'd start by rebooting the phone and reinstalling the app. You can also try the web client (my.arlo.com) to see if it shows the same thing.

I cannot find a newer version in the Apple App Store. Plus, when I sign into my.Arlo there isn’t an area to even look at my cameras. When I go into the Arlo Secure menu it just shows my subscription.

You already have the latest app but I was asking about the user interface which is independent of the app version. I already noted that you were using the old UI which is absolutely fine for this issue. However, you haven't done what I asked you to do - reboot the phone and reinstall the app. That would mean uninstalling the app and then install the same version app as if you never had it before.
BTW, because you have a Pro 2 system, you don't need a subscription. I'm not sure why you would be presented with a subscription page, assuming you log into both the app and web client using the same credentials.

I appreciate your patience. By UI do you mean the platform? I am using an iPad to access the app. I just deleted it and reinstalled, shows the same menus internally. You know, I never thought about the subscription as it’s billed to my business. I have an old 500 gig drive hooked up to the Home Base for storage.
I’m usually pretty tech savvy but this is frustrating…lol.

I figured it out, I forgot I have login for a shared account. It was automatically logging me into that account which has limited access. Once I logged out and into my main, everything is there. Apologies and duh on me.
