Is it possible to have my cameras ON (watching out for strangers for me) but at the same time, NOT recording and NOT reporting about me walking around my own property?
What I have here:
- 3x ultra 2 cameras
- 1x SmartHub
- NO subscription
- App with "Feed"

I can see my ARLO in my google home but when it comes to "hey google" voice commanding, it does NOT work.
Anyone any experience to share?

All the AI features require a subscription. The new person recognition feature requires at least Arlo Secure Plus (and is not available in some locations). I haven't gotten around to playing with that feature yet, so I don't know if it supports your use case or not.
The best you can do without a subscription is to arm or disarm the system (or turn on/off individual cameras).

or .... any chance I could create a (smart) trigger when I open my entrance door, so I can temporarily disable certain cameras?
Say: a smart sensor at the door (exit house) >> trigger ARLO app to disable door camera >> door sensor (entering house) >> trigger ARLO app to enable door camera again

Not sure. You could look into IFFFT and smartthings integration, and see if that will do what you want.

So after trying this on google home, I find it NOT good for my purpose:
- Google home automation can only switch mode to ARM HOME or ARM AWAY. can't switch to STANDBY
- Google home cannot turn on/off individual camera (important for my purpose)
