I'm wondering if when sharing devices, my husband and I can our own accounts to monitor.  Each time he logs in, it logs me out

Yes, that is the recommended way.

Note it works out better if you accept the invite on a PC (either windows or mac) by clicking on "create account" in the invite.  That will open up your browser to my.arlo.com.

 

If you haven't yet created the friend account, you can do that on that screen.  If you already have created the account, you can just log into it.
