My Essential 2nd Gen is set to record an activity until the activity ends, but that is not happening. The recording length is only 10 seconds. How can I increase the recording time?

Did you set this on the default mode page, or did you customize a rule?

I’m setting the record time on the Default Mode Settings. I do not find an activity record time setting on the customized rule page. Am I missing it?

You don't see the choice between recording until activity stops or a fixed recording time in the default mode settings? If not, try reinstalling the app - it should be there.
In the modes and rules for the camera you can choose Add An Action and add Customize Device to do the same thing.

Then it should be applied to all recordings.
Maybe try setting it to a fixed time (longer than 10 seconds), so you can see if that works [or not].

If you select "add an action", and then "customize device" you should eventually get to a way to change the duration for that rule.
I'm not suggesting you do that, I was just wanting to be clear on where you'd changed the setting.

I’m using Default Mode settings to set “Record until activity ends”. On the customize rule page, when I add an action it gives the option for ‘record an event’ which was already set, and there’s no further option for record time.

Try navigate to Routines > Arm Away > select the desired camera > Add an action > Customize Device > select the desired camera > Modify Settings > Recording Duration > select Until Activity Stops
You would then want to create this same action for all desired cameras and modes
