Has the end of life date been extended for this model? Also, if I don’t renew, am I understanding it correctly that I can still see movement on the camera beyond the end of life date.

EOL does not mean the cameras cease to function. They will continue to work as before until the hardware quits or new hardware/software no longer supports them for some reason.

EoL date is 1 July 2023. Security updates will continue for a year, and service (including free 7-day cloud storage) will continue indefinitely.
