Could you please advise: - If I were to buy the Arlo Ultra 4K UHD Wire-Free Security Camera System would I be able to put my phone on do not disturb at night and still hear the siren activating?

Notifications on the phone are different from the siren.

The siren is in the camera, and not the phone. It's not all that loud, so you likely wouldn't hear it unless the camera is nearby (same or adjacent room). FWIW, my cameras are set to never engage the siren.

The notification when motion is detected will be silenced by default if the phone is on do-not-disturb. But with Android you can go into the do not disturb settings, and tell the phone to allow Arlo notifications. Similarly you can enable Arlo notifications with the iOS focus feature.
