I’m not the author, but I’ll jump in since this is a question that I have. Option 1 (detect motion without siren).

I have the siren turned all the way down, but it’s still pretty loud. I’m just hoping to receive a notification on my phone when there’s motion, without setting off the siren.

Go into the mode(s) you are using, and look at the rule for the camera(s). There is an option in there to "Activate Siren". Turn that off.

Not sure if that also answers @Sjdeacon's question.
