Any ideas on how to secure the cameras so they are not stolen; without putting them behind glass or a plexiglass dome?

Best you can do is a standard screw in type mount ( 1/4-20 ) and place up out of normal reach.

Anything ( almost ) can be stolen.

It is why the package thieves, except the real low IQ ones, all wear baseball caps. Most security cameras are high up and out of reach
