At 1:57 in the video she is turning the ring on the mount. That can not be done with the mount to this camera.
It is completely rigid once it has been fastened.
Its the same on both mounts that came with the two cameras.

The mount have this little cog design and when it is mounted on the camera its is not straight. To get the cam straight, I need to only use one screw on the wall mount and then turn the camera so it’s straight. Anyone seen this ?

Can't you just loosen the center screw, rotate the camera to straighten it, and then tighten the center screw again?

Have you already installed the mount to the camera and wall plate? Once placed on the wall you can adjust the angle of the camera. You can find detailed instructions on how to mount this here

Due to the cogs that it has to clicked into, it can not be put straight. The cogs are somehow not made to keep it straight ....

You can rotate the camera once it's mounted and screwed in, You may not have noticed because it requires some force to turn the camera physically. If you provide a little forceful turning in any direction, it should move on the balls pivot point.
