If so how many cameras can I connect is there a max number ?

Can I store / backup camera data Locally using the USB 3.0 ports or eSATA port on my NightHawk X4 AC2350 R7500 Router

Nope, only the R7000 at this time. You can verify this by looking at the basic setup screens on any other routers where you won't find an Arlo setting.

Only after you manually or programatically download them. There's currently no automatic local storage for the wireless cameras. The only one that has somewhat similar capability is the Q Plus which has an SD card slot.
